Ingredients:
- 2 cups whole wheat flour
- 4 medium-sized potatoes, boiled and mashed
- 1 green chili, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 tablespoon fresh coriander leaves, chopped
- Salt to taste
- Ghee (clarified butter) for cooking
Directions:
- In a mixing bowl, combine the whole wheat flour and a pinch of salt. Add water gradually and knead the dough until it’s soft and pliable. Cover it with a damp cloth and set it aside for 15 minutes.
- In another bowl, mix the mashed potatoes, green chili, cumin seeds, red chili powder, turmeric powder, garam masala, fresh coriander leaves, and salt. Mix everything thoroughly to make the potato filling.
- Divide the dough into equal-sized balls, slightly smaller than a tennis ball. Take one dough ball, flatten it in your palm, and place a portion of the potato filling in the center.
- Gather the edges of the dough to encase the potato filling completely. Press it down gently.
- Roll out the stuffed dough ball into a flatbread (paratha) using a rolling pin. Be careful not to tear it.
- Heat a griddle or skillet over medium heat. Place the rolled-out paratha on the hot griddle and cook until you see small bubbles forming on the surface.
- Flip the paratha and spread some ghee on the cooked side. Flip it again and spread ghee on the other side as well.
- Cook until both sides are golden brown and crisp.
- Repeat the process with the remaining dough balls and potato filling.
- Serve hot with yogurt, pickle, or a side of mint chutney.
